Not to mention the troubleshooting guide, albeit available to all.

Had great luck with MatterControl but now I am having trouble with larger file sizes/complexity. Been using 1.5. Tried to upgrade to 2.0 but getting a strange error.

Will upgrading to S3D fix my problem? For just a few more dollars I can buy an Ender3. Which is better way to go?

Slicers bring the entire "slice" into RAM as they create the gcode.
It is easy to exhaust RAM if you have too many vertices that must be processed.

The slicer can matter because they all use a different method for generating the code.

I can't promise you S3D would do it, but they will still refund you money for up to two weeks:

"Try it for a full two weeks! If you don’t love the software, return it for a full refund."

Above is from their page : https://www.simplify3d.com/buy-now/

Personally except for the resin printers (which don't use slicers like the FDM printers) I only use it and have for years.
Well worth the cost and cheaper than my CNC software...
