Make sure your thermistor and heater are in and secured.

Both seem in place and fine. What else could it be?

Yes, that also seems ok. Simplify 3D listed an error of the extruder being off? Something like a reset with 1099 command?...

Are the wires for the heater the correct polarity ? Compare to your old. You can also unplug the power and use cord for a bit to see if it is just confused

I can't help regarding the reset code I have no experience with that. Other members may chime in shortly that know what that does

If the thermistor is not reading room temperature when you turn it on and connect the software initially then something is wrong with either the thermistor or the wiring to it. Make sure it is connected to the RAMPS and connected correctly all the way to the hotend.
You can try reading the resistance of it to see if it is ball-park 100k ohms and not shorted.

Unplugging the power cord is not enough to reboot the Arduino. You also have to disconnect the USB cable :)

So the new thermistor wires were wired opposite to the prev ones. I swapped the red with the black and reconnected it before turing off the machine and unplugging everything. When I turned it all on I got the same error! So I then swapped the wires to the hot end and did the same steps...... same error! aaarrrrrggghhhhhhh!!!

Well, a thermistor is not polarity sensitive so I imagine +/- are not important. Having on the correct set of pins is important :)
Forgetting what the LCD screen says what are you seeing for temperature of the extruder when you connect your software (S3D I presume) to the printer? What does it say the temperature is?

Regular thermistors are easy to break or short when you install them. They are quite fragile.
I much prefer the metal stud style (those are much less easy to damage).

Make sure the thermistor wires are not shorted (down by the hotend that can be easy to happen if your insulation doesn't cover them all the way).

That is a picture of the heater core and block, but not the thermistor :)
The thermistor is a tiny thing something like this:
