I installed Marlin 1.1.5 on my Robo R1+. I set it up for MESH_BED_LEVELING and it prints a 20mm cube fine.

I have not created the Mesh yet, as I want to be sure I have the basic Z Offset working first (Mesh values report all 0). I found the Z_PROBE_OFFSET_FROM_EXTRUDER needed to be -1.88, which is about double the usual -0.9 for the printer. No offsets are specified in the Start Code. I verified via M503 that the printer is using -1.88.

Should I care what the Z Offset value is, as long as it works?

I notice that my Z switches are not set up like the attached photo I found on the web. On my printer the top of each micro-switch rests against the bottom of the plastic lead screw housing. In other words, I don't have a gap above the switch, per the photo, where a top portion of the lead screw nut is exposed.

I tend to say "If it ain't broke, don't fix it", but wanted to get some opinions on the offset value.

My guess is no as long as it works, use what you found.
