    Do these scanners create files that can be edited? For example could you scan a knob or bracket and then size it so it will be the exact size and shape of the original? Or edit it to improve the design??? Or is this just for replicating art?

    well from what i am reading from their sites
    the Moedls scanner: We currently export in .ply and .stl format. Obj will be added if there is demand.
    the Photon scanner: Currently, models produced from the Photon, can be saved as .STL, .OBJ, and point cloud .PLY formats.

    So they look like they are saving the same file formats or will soon.

    Looking at the pages and videos they show the working software but the Moedls shows actual hardware usage.
    As far as making an exact size copy I dont have that answer from readin the pages. They talk about accuracy of the scans.
    I imagine its up to the user to do the sizing with what ever software they use to edit the model.
    Yeah they both show the "replicating the art" bits...
