I have started to have a problem with the hotend holding a consistent temperature during prints at 215c. Its heats up, starts the print then falls to 185c within a few minutes then I get an Temp error on my lcd.

Could there be a problem with the red thermistor?

I've had my fan kick on and cool down my hotend enough to fail.

What fan are you using? stock?

Do you have a fan duct?

I have to set my Stock R1+ to about 60% fan speed after the second layer or it gives me temp fall errors. If I use 100% fan speed it always gives me temp fall errors.. Thats with simplify3d though I don't know how mattercontrol is.

This is not a slicer issue. Simplify is commanding the temp same as MC would the hotend is not maintaining it.
That can be because of the air from the parts fan blowing on the nozzle or a weak heater core (I love the 40w ceramic ones-- never an issue since swapping).
