Measured with a kitchen thermometer to 190 Celsius when thermistor reads 220. Would the -50 fix my problem with printing possibly?

Doubtful. The fun part about thermal measurement is that it only tells you the temp exactly at the sensor. So that delta between your thermistor and kitchen probe is likely just a locational difference. When you first fire it up what temp does your hot end show?

One feature built into the firmware is an automated over temp shut down. So if your machine is telling the hot end to heat up, but it doesn't see the temperaturee go up after a little while it shuts down under the assumption that your thermistor is broken. Which it sounds like you might have, but I'm puzzled by its ability to heat up at all and report a temperature if you got an infinite resistance.

Makes sense. Why would my printer motors not be able to be controlled manually though?

I think the automated shutdown due to over temp prevents any movement.

When you turn your machine on cold and without pre-heating can you move the print head around with the manual controls in the software?

I'd try setting up Cura. There is a sticky for it under software.

The external temperature is not an indicator of the internal temperature the thermistor is reading

Find the break in the thermistor line instead of mucking about trying to pointlessly move the axis
